The Panettone made by Federico is the result of a fantastic adventure that lasted almost a lifetime.

Its story begins many years ago... since he was young, Panettone has traveled the world to be inspired by the wonderful places he dreamed of discovering, meeting people of every culture and origin.

Along its path, Panettone has treasured every personality and has in turn been appreciated and admired, enriching itself with teachings and life stories overcoming many difficulties to make its dreams come true.

Until the day came when he decided to share with everyone his good attitude that allowed him to overcome every obstacle. For him, even today, this remains an ambitious goal that is perhaps achievable, his engine in this continuous journey beyond time, space and mind. A journey that Panettone travels driven not by materiality but by a great desire to grow and manifest itself in the world to spread its nature, its happiness, its joy, beyond flour and water, on all levels and at all levels.

FRESH PRODUCT WITHOUT PRESERVATIVES! CONSUME AS SOON AS POSSIBLE!

The life of the product is given by the living sourdough yeast which is a unique and great preservative, it gives unique aroma and perfumes!

It transforms the panettone day after day even after cooking!

Store the Panettone in its closed packaging in a cool, dry and possibly dark place.

If you don't eat it right away, you can keep the Panettone in the fridge, it will extend its life, but I recommend putting it at room temperature for a few hours before enjoying it so that it can release all the aromas and flavors it contains! If possible, avoid the freezer!

To cut Panettone I recommend using a very sharp serrated knife, don't press too hard, let the blade sink in on its own!

Once opened, if it is not finished, I recommend storing it tightly closed in its bag! Dry air tends to dry out the panettone!

You can serve the panettone accompanied by a good cream or with some good ice cream, but honestly I appreciate it on its own, perhaps with an excellent glass of wine!

The citrus paste I use as a natural flavor is made only with oranges, mandarins, lemons and sugar with a method of my own invention. I will soon be able to make my own candied orange peel.

I started making panettone in the early 2000s, since I was a child I dreamed of making them!!

I still remember my father helping me cool the dough in the small 10kg mixer.

When I first received the live sourdough starter I was so excited!! Since then it has exploded many times in my fridge, luckily today it doesn't happen anymore!

In 2020 due to the Covid pandemic I could not work as a ski instructor, it was then that I decided to build my own laboratory!

In the early years I produced a few panettone just for friends: I let them rise in the leavening cell built by my father and cooked them all perfectly in the oven at home... what adventures!

My logo represents me! Magical creation after a year of work...I'll just tell you that we started from the image of the sphinx.

I have a fantastic sound system in my lab that plays at full blast all day long! I live by tekno!

When I refresh the sourdough starter, I don't throw away the leftover part right away...I keep it in my laboratory as an air freshener.

Panettone and Fede don't always get along, they often argue! But then they always make up and their bond becomes stronger!
